Peanut Satay Sauce – back and better than ever!

Do you remember my very first post where I introduced my favourite Peanut Satay Sauce?

Grilled Shrimp Skewers with Peanut Sauce

Well in the midst of my vegetarianism, I was running out of things to eat. All I had in the house were some veggies and a whole lot of shrimp. I love shrimp, but I must say I got quite tired of it after eating it for weeks straight while vegetarian. But of all the shrimp dishes I made, this one was the best – and it was entirely my creation!

The recipe is actually for a marinade and a peanut sauce, but I cheated and just made the sauce and marinated the pre-cooked shrimp in it for about an hour. Then I stuck the shrimp on skewers and grilled them on my handy cast-iron stove-top grill cover from Costco (I love Costco!) As I did this, I brushed the shrimp with more peanut sauce. I didn’t cook them long – just long enough to get grill marks and make the sauce nice and sticky.

All this was served with some mini potatoes, halved and drizzled with olive oil and then sprinkled with Cajun seasoning. And of course some veggies!

This satay sauce is so versatile. You can eat it with rice chips, shrimp or chicken – even tofu, I bet! I literally could eat it with a spoon. If you’re a peanut lover like me… this is definitely worth a try!

Peanut Satay Sauce

  • 1 cup chunky peanut butter
  • 1 tsp. hot chili sauce (like sriracha)
  • 2 cloves garlic, minced
  • 3 tbsps honey
  • 1 tsp cayenne pepper
  • 1/4 cup lime juice
  • 1/4 cup soya sauce
  • 1/2 cup peanut oil (or other oil)

  1. Mix ingredients together. Should have a sweet/hot peanut flavor. Taste and adjust ingredients accordingly.
