It’s the same at every party or get-together – the dips are always the first to go. Nacho dips, layer dips, spinach dips… if you bring a dip, rest assured it will be eaten. They are often the most popular food item at a party.
Dips are my personal favourite, particularly if they are cheesy or spicy. And clearly I’m not alone. My friends and I often joke that our book club has become a cheese/wine club (which is entirely true, although the books are still important). Like me, they love cheese of all sorts and at least half of our members bring something cheesy to our potluck meetings.
Potlucks are awesome – the best way to have a party, I’d say – but people always seem to have a hard time deciding what to bring. They normally want to find something easy, but still delicious. Ideally, they want to bring something that will be the hit of the evening. Right?
Dips are your safest option. They’re a food you can gather around and chat over. They bring people together, and above all, they’re devilishly addictive.
So for my book club Christmas party, I decided to bring a dip. I found this Pizza Dip on Pinterest and it looked super easy, without complicated ingredients. I made it for my book club Christmas party and it was devoured. My fellow j-school graduate Catherine Kitts even blogged about it. A couple days later, I made it for My Other Half’s 29th birthday party. Since then, I think I’ve made it 10 times. You really cannot go wrong with this pizza dip.
- ¾ block of cream cheese, softened
- ½ cup of sour cream
- ¼ cup mayonnaise
- 1 cup shredded mozzarella
- ½ cup pizza sauce
- Pepperoni for the top (optional)
- Mix first three ingredients and half the mozzarella. Spread in pie dish. Top with pizza sauce and the rest of the mozzarella. Bake for 30 minutes on middle oven rack at 350 degrees.
