I’m pretty sure four out of five guys will say “meatloaf”.
I tend to agree. What’s not to like?
We love meatloaf at our house. One of my favourite recipes of all time is my Mexican Meatloaf. I’ve made it over and over for a couple years now and every time I am surprised all over again by how amazing it is.
But I realize I need to branch out a bit. Surely there are other equally fantastic recipes out there. Over the next month, I’ve got a couple new meatloaf recipes planned. These Salsa-Stuffed Mini Mexican Meatloaves are just the beginning.
It seems like little things are all the rage right now. Sliders, mini sausages, cake pops, cupcakes… so why not meatloaf?
- ½ cup bread crumbs
- 1 green onion, sliced
- ¾ cup drained & rinsed black beans, from a can
- 2 tsps chilli powder
- 1 tsp pepper
- ¼ tsp salt
- 1 egg (I used two really small ones)
- 1 lb lean ground beef
- ½ cup salsa
- ½ cup shredded marble cheese
- Mix everything except the salsa and cheese (obviously) really really well. Shape into eight balls and put in greased muffin tin. With your thumb, make a indent in each beef ball. Spoon in some salsa and top with cheese. Bake at 400 degrees for 15 minutes.
This recipe made me want to try ALL types of meatloaf in a muffin tin. The presentation is so much better than when you make one big meatloaf! They’re kinda cute too.
We served these yummy little things with an amazing Honey-Lime Oat and Black Bean Salad, which My Other Half absolutely loved. We even forgot to add the avocado and cilantro the first time we tried it and it was still good – he says he likes it better that way!
Just so you know, you can get oat groats (also known as steel-cut oats) at the Bulk Barn. This is the first time I’d used them!
