You guys are probably completely tired of chipotle recipes, but you’re going to have to put up with just one more (for now)…
This post is meant to prove how completely delicious, addictive and useful (yes, useful) my homemade Chipotle BBQ Sauce is, as talked about in this post and this one. It’s my favourite multi-purpose sauce and it should be yours too!
I made a big batch to make this pasta, but there are always leftovers. I used some of it for my salmon last week, and then again to make this delicious Chipotle Spinach & Steak Salad with avocado and goat cheese.
There’s nothing too special about the ingredients, other than I think they worked wonderfully together. I love the texture of the avocados, the surprise of the goat cheese and the kick of the chipotle dressing. Basically, though, you can use this dressing on whatever salad combination you want.
The recipe is incredibly simple, especially if you already have the sauce made!
Chipotle Salad Dressing
4 tbsps Chipotle BBQ Sauce (recipe found here)
½ cup heavy cream
Blend or whisk together and serve!

And just in case you’re wondering… the goat cheese in that picture is actually fig goat cheese (which is a bit pink and sweeter). Yum!
