Paleo Salad with Prosciutto, Avocado & Mandarins

All of a sudden I am hearing about “paleo” everywhere I turn.

I have ignored it, mostly, until one of my best friends, Kristy, announced she was doing it… and coming to my house for supper.

As much as I love to cook, I don’t typically cater to such limiting diets when I have people over… but I also didn’t want to be the reason Kristy cheated either. And cooking something paleo-compliant is much different than say, omitting mushrooms (another thing Kristy the diva won’t eat).

For those of you, like me, who know nothing about this paleo phenomenon, here’s a brief rundown from Wikipedia:

The paleolithic diet (abbreviated paleo diet or paleodiet), also popularly referred to as the caveman diet, Stone Age diet and hunter-gatherer diet, is a modern nutritional plan based on the presumed ancient diet of wild plants and animals that various hominid species habitually consumed during the Paleolithic era—a period of about 2.5 million years which ended around 10,000 years ago with the development of agriculture and grain-based diets. In common usage, such terms as the “Paleolithic diet” also refer to the actual ancestral human diet.

Centered on commonly available modern foods, the “contemporary” Paleolithic diet consists mainly of fish, grass-fed pasture raised meats, eggs, vegetables, fruit, fungi, roots, and nuts, and excludes grains, legumes, dairy products, potatoes, refined salt, refined sugar, and processed oils.

So basically, Kristy is a caveman and I must accommodate her, or she could possibly go hungry and decide to eat me, since – based on the above description – cannibalism is fair game.


Actually, it wasn’t so bad. If you think like someone trapped in the wild, it’s pretty easy to come up with paleo meals. I did a bit of research to better understand the limitations and decided to recreate a salad I found on Pinterest. I am happy to report it was original, filling and delicious!

Paleo isn’t so bad after all, I guess. Kristy’s okay too.

Paleo Salad with Prosciutto, Avocado & Mandarins

Yield: 2


  • 2 cups spinach, torn
  • 100g prosciutto, chopped
  • 1 can mandarin pieces, drained
  • 1 avocado, sliced
  • ½ cup diced red pepper
  • ½ cup chopped walnuts
  • Paleo vinaigrette:
  • 4 tbsps Dijon
  • Juice from half a lemon
  • 2 tbsps olive oil
  • 2 tsp balsamic vinegar
  • Salt & pepper, to taste


  1. Place all dressing ingredients in a mason jar and shake/stir to combine. Divide spinach on two plates. Top with prosciutto, mandarins, red pepper, avocado slices, and walnuts. Drizzle with dressing and serve.
