Asparagus, Prosciutto & Goat Cheese Pizza

By Thursday, April 18, 2013

Remember doing make-your-own pizzas at birthday parties growing up? I loved that. It’s probably why I keep challenging My Other Half to participate in Battle of the Pizzas.

This isn’t another post about our playful competition with each other, though. It’s about my friend Erin and the fabulous pizza she made. I loved it so much, I asked for the ingredient list and made it the following week.

Asparagus, prociutto, garlic pizza

On a side note, pizza is the easiest lunch to take to work. I make it the night before, cut it and refrigerate it. Lasts a couple days! It also helps that I buy crusts and sauce at Costco and freeze them, so I always have an easy meal option.

Back to Erin’s delightful pizza creation. No traditional tomato sauce makes this pizza more like a flatbread, really. So good. I’m tempted to call it a white pizza but I think that would involve a cream sauce, no? Regardless, try this. You’ll love it.

Asparagus, Prosciutto & Goat Cheese Pizza

  • 10 asparagus stalks, grated/shaved
  • 6 sliced of prosciutto, torn
  • ¼ cup mozzarella, shredded
  • 70g goat cheese, crumbled
  • 3 tbsps olive oil
  • 1 tsp minced garlic
  • Pepper, to taste
  • 1 pizza crust

  1. Mix the olive oil and garlic and baste the crust with it. Spread out the shaved asparagus, then the prosciutto. Sprinkle with a little pepper. Distribute the goat cheese and finish with the mozzarella. Bake at 400 degrees until the cheese begins to golden, or according to crust instructions.

I am now addicted to pizza without tomato sauce. Can’t wait to try a pesto version – yum!
