Cream Cheese Chicken Chimichangas & Broccoli Cashew Salad

A double whammy today! Two recipes in one post!

This was  super delicious meal I whipped up a couple weeks ago. We loved both recipes. I’d been eyeing chimichangas on Pinterest for some time and decided to create my own version!

I have quite a bit of experience with traditional chimichangas, having worked at Feleena’s for four years, so I can tell you these are anything but traditional. They are delicious though. Doesn’t cream cheese just make everything better?

Cream Cheese Chicken Chimichangas & Broccoli Cashew Salad

Ingredients

  • ½ package cream cheese (4 oz)
  • ½ cup shredded cheddar cheese
  • 1 cup cooked shredded chicken
  • ½ cup black beans
  • ¼ cup hot sauce (or to your taste)
  • Cooking spray (we use Pam)
  • Green onions (for garnish)
  • Sour cream (for garnish)
  • 2 large flour tortillas (we used whole wheat)

Instructions

  1. Stir together the first five ingredients. Divide the mixture between two tortillas and roll them up. Lay them seam down on baking sheet and spritz with cooking spray. Bake at 350 degrees for 15 minutes, then flip and bake for another 15 minutes. Add a bit of cheese on top at the end. Drizzle with a bit of extra hot sauce, sour cream and chopped green onions. Careful – it’s hot!

chimichanga

As for the salad, this was super easy and delicious. I’ve mentioned the broccoli slaw mixture I sometimes buy (as seen in this recipe) and this is what I used here. You could just julienne broccoli to make this, but that’s super time consuming. I’d rather use my food processor to shred the broccoli stalks. This salad is crunchy, salty and fruity all at the same time.

Broccoli slaw

Broccoli Cashew Salad
Adapted from President’s Choice

3 cups PC Broccoli Slaw
1/4 cup red onion, thinly sliced
1/2 cup toasted cashews
1/2 cup dried cranberries
1/3 cup PC Avocado Mayo Sandwich Spread
1 tsp white wine vinegar
1 tsp sugar
Salt & pepper, to taste

I should also introduce my new favourite condiment – the avocado spread. Delicious. I have been shying away from buying anything processed these days, but this spread is pretty darn good. I use it sparingly so I think it’s okay.
