Ohhh yum. I love salmon!
I never used to, though, which is kind of weird. I went through a whole “I don’t eat seafood” phase as a teenager. So strange, since it’s now one of my favourite proteins.
I really really love maple salmon. Mouth-wateringly delicious. Salmon is such an easy supper… it tastes good no matter what you season it with (as long as you don’t overcook it. Overcooked seafood is my nemesis).
This is such a simple recipe, and melt-in-your-mouth good. And in case you’re wondering, the two sides in the photo are my Lemon Arugula Risotto (minus the arugula) and a garden salad with my favourite wafu dressing.
- 4 salmon fillets (roughly 6 oz each)
- 1/2 cup of maple syrup
- 1/2 cup of grainy mustard
- freshly ground salt & pepper
- Season the salmon fillets with lots of salt and pepper. Whisk the maple syrup and mustard together. Place the salmon in a small dish. Pour the marinade over the salmon and marinate for at least an hour (the longer, the better). Preheat your barbecue to its highest setting. Grill the salmon fillets directly on the grill for about 5 minutes on the first side, a little less on the second side. Serve at once.
