Remember, almost two years ago, the first ever battle on The Domestic Blonde?

No no, not the Battle of the Pizzas. Battle of the SOUPS!

This was when I took two very similar soup recipes (by Guy Fieri and Oh She Glows), made them both and evaluated which was better. The Oh She Glows soup won handily.

Carrot Apply Ginger Soup

Strangely enough, I hadn’t made either soup since then. I try new recipes so often that I forget about my favourites. But when my friend Erin posted on Facebook that she’d made Carrot Apple Ginger Soup, I got a craving. I revisited my Battle of the Soups post and experimented a bit.

Behold, my own version of Carrot Apple Ginger Soup!

Julia’s Carrot Apple Ginger Soup


  • 1 large onion, chopped
  • 1 large apple, cored and chopped
  • 1.5 lbs carrots, peeled and chopped
  • olive oil
  • 4 cups chicken broth
  • 3 tsps minced garlic
  • 2 tbsps minced ginger
  • salt & pepper, to taste


  1. Cook onion with some olive oil until soft. Add garlic and ginger and stir, then add apple and carrots and stir again. Add broth and bring to a boil. Simmer for 20 minutes, covered. Blend or use a food processor until smooth. Be careful – hot soup will explode when blended, so be sure to allow steam to escape. Add salt and pepper to taste.
