
Ohhh my noodle problem.
The other night, My Other Half said it best. “I’ve never known anyone to love noodles as much as you do.” I thought… me neither!
I’m allowing myself to eat noodles, like, 10 times more often than normal, because I’m running so much. Which means I am also making My Other Half eat noodles on the regular. (Thankfully he’s running a lot too).
At least we don’t have chips in the house anymore (and haven’t for over a year – ever since I gave them up as a New Year’s Resolution). And my perogie addiction as subsided. So a little pasta 20 times a week can’t hurt, right?
Spaghettini with Spinach, Mozzarella & Anchovies
Ingredients
- 100g spaghettini (I used whole wheat)
- 1 tbsp olive oil
- 2 tsps minced garlic
- ¼ tsp chilli flakes
- 2 anchovies, drained and minced
- 30g spinach, chopped
- 50g fresh mozzarella, chopped
- 1 tbsp lemon juice
Instructions
- Cook pasta. During, heat oil and fry garlic. Add chilli flakes and anchovies and stir for 30 seconds. When the pasta is ready, add it to the chilli flakes, garlic and anchovies. Add spinach and mozzarella and toss. Season with salt and pepper and spritz with lemon juice.
