This is definitely one of those dishes. My Other Half and I went NUTS over it, and it’s so easy. And beautiful to photograph too!
So you’re probably wondering exactly how spicy it is. I will say this – it’s VERY spicy, but not “OMIGOD MY MOUTH IS GOING TO DIE” spicy. It’s a tolerable heat that allows you to still taste all the other delicious flavours.
However, if you’re sensitive to spicy things, I’d recommend cutting the sriracha in half, or at the very least decreasing it. It will still be delicious!
- 1 cup quinoa
- 1/4 cup coconut oil
- 2 lbs chicken breast, cut into bite-size pieces
- 1 small onion, diced
- 1/2 cup sriracha (adjust to your liking)
- 1/4 cup honey
- 1 tbsp lime juice
- 4 green onions, chopped
- Cilantro, for garnish
- Salt & pepper, to taste
- Cook quinoa in 1.5 cups of water, or according to package directions. Melt coconut oil in a large frying pan. Fry onion until soft. Add chicken and cook until browned on all sides. Stir together the honey, lime juice and sriracha in a small bowl. Add it to the frying pan and and simmer until chicken is cooked through, stirring every so often, until the sauce thickens and clings to the chicken. Season with salt & pepper. Serve over quinoa with a generous garnish of green onions and cilantro.
