It’s back to school next week!!!
Or at least I think it is. Neither of us are in school and we don’t have children, so I’m really just guessing.
I cannot believe it’s basically September! That’s nuts. Even though I am excited for fall, I’m sad summer is practically over too. We haven’t even made margaritas yet! Maybe we’ll do that this weekend…
Anyway, I know there are a TON of people that are out there shopping for school supplies, planning what to wear on the first day of school, and absolutely dreading making packed lunches again. I stand by my old Roomie’s theory that if you make two recipes on Sunday, they will last you all week for lunches, especially if you add in some leftovers from supper that week. That’s still what we do at our house. It’s a great system, unless you’re a regular PB & J sandwich lunch-eater, in which case it’s no problem to whip lunch up in the morning before school/work.
Uh-oh… now I really want a PB & J sandwich. With crunchy peanut butter, duh.
I’m the kind of person who wants lunch to fill me up. I don’t want to be hungry between lunch and the end of my work day (but let’s face it – I always am), so quinoa is the perfect thing to have for lunch because it’s so filling. And if you pack a quinoa salad with veggies, you really can’t go wrong.
These are my five favourite, tried-and-true quinoa salad recipes. They are all delicious cold, so you don’t even need to microwave them!
