Skor Bar & Chocolate Chip Mini Cookies

I made you COOKIES!



These are actually baby cookies – the ones I first wrote about way back in 2011. When I read that post, I remember how AMAZING the cookies were (and how everyone in my offices gobbled them up), but I also look at the Christmas décor and feel a little nostalgic… with the wedding on New Year’s Eve, there’s just no way we can decorate for Christmas this year. So all my pretty (read: tacky) decorations will just stay in their boxes. Sad!

Not that we normally do a ton of decorating. We have a wreath on the front door, a proper tree (not a fake one), and a few other red and silver things. I grew up with mismatched decorations and ornaments and multi-coloured tree lights so I just love everything to MATCH. And red is best… so red and silver it is. It’s looks nice!

It won’t come as any surprise that my favourite Christmas lights are plain white ones. I LOVE a house done up in all white lights with green wreaths and red ribbons. Simple, classic. Just like this picture!

If you recognize that house… you win. At life.


These are not Christmas cookies. They’re baby cookies. Tiny little morsels of delicious chocolate chipness with – wait for it – Skor bar pieces!!!

My Other Half flipped out. He was SO excited about the Skor bar pieces. And the fact that these cute little mini-cooked are basically bite-size.

Scor Bar & Chocolate Chip Mini Cookies

Yield: 4 dozen cookies (48)


  • 2/3 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 2/3 cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup Skor bar chips
  • 1/2 cup chocolate chips


  1. Beat butter with sugars until fluffy. Add egg and vanilla and beat again.  Mix dry ingredients and stir into butter mixture. Add Skor and chocolate chips. Drop by heaping tablespoon onto baking sheets. Bake at 350 degrees until golden (about 12 minutes).
