Buffalo chicken everything!!!

I’ve probably seen a dozen recipes similar to this one on Pinterest. And I’ve always – since 2011 when I got Pinterest – wanted to eat them all. So for football season, I decided to make my own version!

About Pinterest… I go through these waves of obsession. A month will go by and I won’t touch it. Then I will be on it for what seems like ten hours a day, just obsessing like crazy over every tiny recipe. And yes, I use Pinterest almost exclusively for food. Have you seen my boards? Almost all food. It’s crazy.

And don’t you just wish you could see people’s secret boards?! For example, I kept all my wedding pinning private on a secret board. Had to be done.

Back to food – one day I’m going to have to make a huge long blog post that will just be a round-up of all my buffalo chicken recipes. I swear there are two dozen by now. And Costco coming out with this gallon jug of buffalo chicken sauced did not help.

And BACON! My cousin-in-law believes in adding bacon to everything. I tend to agree.

Serve this with a side of sour cream… just yes.

Buffalo Chicken & Bacon Potato Casserole

Yield: 6-8 servings


  • 1 lb cooked chicken, shredded or finely chopped
  • 5 potatoes, cut into cubes
  • 1/3 cup olive oil
  • Salt & pepper, to tsate
  • 1 tbsp paprika
  • 2 tbsps garlic powder
  • 1/2 cup buffalo sauce
  • 1 1/2 cup shredded cheese (I used marble)
  • 8 strips of cooked bacon, crumbled
  • 4 green onions, sliced


  1. In a big bowl mix together the olive oil, salt & pepper, paprika, garlic powder and buffalo sauce. Add the potatoes and chicken and toss to coat. Spray a 9x13 baking dish with cooking spray and pour in the potatoes/chicken mixture. Bake at 500 degrees for 45 minutes. Stir at least once. Sprinkle with cheese and bacon and bake for another 15 minutes. Garnish with green onion and serve.
