Today’s is soo easy peezy. Cook some chicken, throw a bunch of stuff in a food processor and PRESTO – gourmet lettuce wraps.
That may be a bit of an exaggeration but you get the picture. This is a super quick just-got-home-from-work recipe.
A note about the sour cream – the first time we made this, we didn’t add it to the sauce. We just used it as a garnish. The second time, it was added to the sauce, and it was delicious. It’s optional, but without it the recipe is very spicy. We like cream to offset heat. Just beware!
Heat 2 tbsps of oil in a big frying pan. Season the chicken with salt and pepper and fry until cooked through and golden brown all over. Remove from heat. In a food processor, combine the cilantro, lime juice, chipotle peppers and the adobo sauce. You can also add 1/4 cup of sour cream here, if you want (save the other 1/4 cup for serving). Process until smooth. Pour this chipotle mixture into the pan with the chicken, corn and red pepper. Stir to coat and serve in lettuce cups, garnishing with green onions.
