I’m all about smoothies this week!

Last weekend I realized I was just not eating enough fruits and veggies. After a trip to Pure Kitchen for lunch (which I adored – had the layer dip, mystical bowl and champion juice) I vowed to have a smoothie a day all week (and hopefully continue longer than that).

The problem with smoothies, at least for me, is variety. I like to switch things up. We have a ton of grapefruits kicking around, and I’ve never used grapefruit in a smoothie, but had this brilliant idea of combining them with spinach and apple for sweetness. It was awesome!

Not too sweet, but refreshingly tart, I devoured both servings of this smoothie. I instantly felt cleansed! That, combined with my meal at Pure Kitchen, made it a super healthy day.

Grapefruit Spinach Smoothie

Yield: 2 servings


  • 1 grapefruit, peeled, seeded
  • 1 large apple, cored
  • 2 cups spinach
  • 1 large banana, frozen
  • 3 ice cubes
  • 1/2 cup coconut milk or orange juice (or liquid of your choice)
  • 1 tbsp ground flax (optional)


  1. Put all ingredients in a blender until smooth. Add more ice to thicken, and more milk/juice to thin. If your banana isn't frozen, be sure to add an extra ice cube.
