I’ve seen a billion recipes for “meltaway” cookies on Pinterest lately, so I decided to see what all the hype is about!

I made a few versions before I found a really good one, that seriously melts in your mouth. Basically, all the recipes are every-so-slightly modified versions of regular butter cookies. These are different from my shortbread!

These really do taste as though they’re melting in your mouth… but be warned, they’re basically pure butter and sugar, which is delicious if you’re into that sort of thing, but completely unforgiving to most waistlines.

Festive sprinkles don’t hurt around this time of year, right?

Vanilla Butter Meltaways
Serves: 24
  • 1 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • ¼ tsp salt
  • 2 cups flour (more if too sticky)
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • Frosting:
  • ½ cup butter
  • 1 lb icing sugar
  • 1 tsp vanilla
  • 3 tbsps milk
  1. Cream butter and sugar until light and fluffy. Add the egg and vanilla and beat. Add flour, salt, baking soda and baking power and mix well. If too sticky, add more flour gradually. Using a spoon, make 1-inch balls and place on a lined baking sheet. Flatten the cookie a tiny bit (not too much - they will spread!) and bake at 350 degrees for 8 minutes. Cookies will not appear to be done, but that's exactly how you want them. Let cool on the pan (they continue to cook a bit this way).
  2. For the icing, cream all ingredients together. When the cookies are completely cooled, frost them and add sprinkles or food colouring, if you want.
