Dark Cherry Italian Sodas
Serves: 2
  • Cherry Syrup:
  • 1 cup pitted dark cherries (I used frozen)
  • ½ cup sugar
  • 2 tbsps lime juice
  • Sodas:
  • ½ cup dark cherry syrup
  • 1 cup sparkling water
  • 3 tbsps cream
  1. In a little pot over the stove, combine the cherries and sugar. Bring to a boil, stirring to dissolve the sugar. When thickened, turn off heat and stir in the lime juice. Let cool. When you're ready to make the sodas, fill a couple glasses with ice and pour in ¼ cup of the cherry syrup (be sure to include a few whole cherries too). Fill each glass with sparkling water and top with cream. Serve with a straw, for stirring, if desired.
Dark cherry syrup can be stored in the fridge for up to a week.
